Third time’s a charm.
I can’t tell you hooow many times I’ve heard this simple phrase and paid it no mind, gave it no attention, practically ignored it. No more.
I’m a changed gal. And I have these cookies to thank.
First batch: set timer for 12 minutes. Didn’t look done, tacked on another two. Crunchy, hard cookies. ย ๐ฆ
Second batch: set timer for 10 minutes. Still didn’t look done, tacked on another two. Slightly overly crunchy cookies. ย :((
Third batch: set timer for 10 minutes. Decided I was taking them out to see what would happen. DEEEEELISH soft and chewy cookies. ย ๐
Third time was a charm. Oh man, were these delicious. I ate a third of the batch by myself, made some into yummy ice cream sandwiches, and shared the rest with co-workers. They are all gone now and I’m left with one regret:
That I didn’t bake more. ( Or share less ;D )
These scream HOLIDAYS and beg to be put in that goodie bag or care package. They beg to be shared over hot tea and good conversation. ย ๐

Whether it is chewy or crunchy, I would still like these…as long as they’re not raw!! That’s the thing about cookies I can’t stand, one minute can really make a huge difference. Wow, you really piled on the icecream!
If I told you that I actually watched the live streaming of the premiere, could you not laugh at me… so embarrassing, but I can’t help it.

I made these cookies as well and dipped half of them in some wonderful white chocolate. The taste is out of this world. I got the idea from a local bakery inside a CO-OP!
I’m just loving the ice cream sandwich version of these cookies. I can’t imagine how over-the-top delicious they must have been. In fact, it’s making me hungry for this sort of ice cream sandwich right now!
It was kind of hard to tell when these were done. But you made it work!
They look very tempting with the ice cream, yum! I’m sure even the crispy ones were pretty good, you can’t really go wrong with sugar-coated spice cookies.

Those sandwiches look so delicious! My cookies were crunchy and I liked them, but I’d like to try to get them chewy next time.

YUM! I don’t think I’ve had an ice cream sandwich since I was 12 and my dad used to buy us klondike big bars… man, I loved those.. But your chewy, spicy versions look absolutely amazing! x
